Through years of experience and study into nutrition we have found that the healthiest diet is a vegan diet rich in raw fruits and vegetables. The ideal is also to eat organic as much as possible because the pesticides and chemicals used in farming are very harmful to our health. If one can't afford to eat everything organic, then try to at least get your greens and lettuces organic. Thick-skinned fruits and vegetables can be washed thoroughly and peeled and much of the pesticides can be removed that way, but removing the pesticides on salad greens is a little harder.

However, a hundred years ago, God shared in vision with Ellen White what the ideal diet for us is. Here is her testimony:

"Grains and fruits prepared free from grease, and in as natural a condition as possible, should be the food for the tables of all who claim to be preparing for translation to heaven. "(Counsels on Diets and Foods p. 63)

We have been instructed that we should prepare our food "with the best fruits and vegetables, prepared in their most natural state, free from grease and spices." (Counself on Diets and Foods, p. 399){CD 399.1}

Note that the above quotes state "in as natural a condition as possible." Eating our fruits and vegetables raw is as natural as possible. This is the diet that Adam and Eve ate in the Garden of Eden. This is the diet that is best for us. The reason is because raw fruits and vegetables contain a lot of enzymes that are critical for our health. These enzymes are destroyed by cooking. Our testimony is that our health has been significantly improved by eating a vegan diet rich in raw fruits and vegetables.
